THE STORY OF MOUTAI
For over 2000 years, in a remote village precariously perched between the mountains and the river of Chishui deep in the valley of Guizhou Province of China, families of artisans has been crafting crystal-clear liquor using pure water from the pristine Chishui watershed as their source.
The world’s oldest known liquor is also the most sought-after one. With over 150 tasting notes in a single glass, Moutai is that rare national treasure - a drink that is as complex as it is pure. For decades, the Moutai distillery has tried to match its supply with demand, but between the geological constraints and the labor intensive process, efforts have proved to be nearly insurmountable. Diplomats prefer it, businessmen seal deals over, and awards keep pouring in, making it one of the most highly-acclaimed liquor in existence.
Every drop of water that goes into a bottle of Moutai flows directly from the surrounding watershed, a protected zone that stretches more than 100 km from the town. Moutai craftspeople are masters of natural fermentation and distillation, often spending entire lives perfecting their craft. Complex tasting notes are the result of rigorous, time-honored processes. And nothing artificial is ever added. Only certified organic wheat and sorghum are used.
Moutai’s ingredients are harvested according to the lunar calendar and distilled using the most rigorous processes. It takes nine distillation sessions, eight filtration sessions, seven fermentation sessions and five long years of aging and tweaking to make each bottle of Moutai. Unlike lesser liquors, Moutai is handcrafted from start to finish.
Only brandy from the town of Cognac can be labeled Cognac. And the same goes for Moutai, which can only be produced in the town that goes by the same name. Attempts to replicate Moutai’s rich, earthy flavors elsewhere have fallen short. The region’s wheat, water and time-honored methods combine to create an irreplicable product that sells out every year.
KING OF BAIJIU
Few in the West have heard of Baijiu (pronounced “By-Jo”) but with over $26 billion market, it is the biggest-selling liquor in the world. Its history dated back over 5000 years and with alcohol by volume between 40% to 60%, it is highly valued in Chinese culinary culture and connoisseurs of the beverage focus especially on its distinct fragrance and taste. Served at the most important state dinners in China, Moutai is the undisputed King of Baijiu.
